A light no-bake strawberry tiramisu with skyr, mascarpone, no added sugar, and juicy berry layers.

# Składniki:

For the strawberry layer

01 - 14 oz (400 g) fresh strawberries, hulled
02 - 1 teaspoon finely grated lemon zest
03 - 1 tablespoon fresh lemon juice

For the light cream

04 - 1 cup (250 g) plain skyr or thick Greek yogurt
05 - 4 oz (115 g) mascarpone, softened
06 - 2-3 tablespoons powdered erythritol or xylitol, to taste
07 - 1 teaspoon vanilla extract

For assembly

08 - 10-12 no-sugar-added ladyfingers or sponge biscuits
09 - 1/2 cup (120 ml) milk or unsweetened almond milk
10 - 1 tablespoon strawberry juice from the macerated berries
11 - Fresh mint leaves, for serving

# Przygotowanie:

01 - Dice about three quarters of the strawberries and slice the rest for topping. Toss the diced strawberries with lemon zest and lemon juice, then rest for 10 minutes so they release a little juice.
02 - In a bowl, whisk skyr, mascarpone, powdered sweetener, and vanilla until smooth and thick. Taste and adjust the sweetener if needed.
03 - Stir the milk with 1 tablespoon of juice from the strawberries. Pour it into a shallow bowl for quick dipping.
04 - Add a spoonful of cream to 4 glasses. Dip ladyfingers briefly, about 1 second per side, break to fit, and layer with diced strawberries and more cream.
05 - Cover and refrigerate for at least 2 hours, or up to overnight. The biscuits should soften but still hold a gentle cake-like texture.
06 - Top with the reserved sliced strawberries and mint leaves right before serving. Serve cold.

01 - This recipe has no added sugar, but contains natural sugars from strawberries and dairy.
02 - Best texture after 2-4 hours of chilling.
